E2 28 Day Challenge - Day 12

Ah Friday! The Friday before a 3-day weekend even! It was a good day - warm, sunny, full of exercise and good food! :)


Day 12

1864 cals (343g carbs, 39g fat, 77g protein, 68g fiber)

Breakfast
I modified this a little bit - .75 cup oats, 1 tbsp chia seeds, 1 tbsp ground flaxseed, 1 tbsp maple syrup. Just cover with boiling water, and let sit for a few minutes - then add the banana on top.
Simple and yummy! filling too

Lunch
Apparently I did not have tacos :)
I did make tacos for Paul - he went to the fair with our 6yo and I wanted to make sure he had something with him so he wasn't tooo tempted by the fair ... fare!
I just had leftovers from dinner a couple nights ago - the lentil spaghetti - pretty good cold :)


Dinner
New York Times Burger & Potato Wedges & Edamame
While making up these burgers, I realized I did not have enough oats! The mixture was too soupy... so I had to find SOMETHING to thicken it up so the whole thing wouldn't be a waste... so I put 2 cups of the mini shredded wheat cereal in the food processor and chopped that all up. It actually worked great!!
I was a little skeptical about these as I made them into patties - they were kinda wet... but they baked up really nice, and as they cooled they became even more put together!
I really enjoyed these and would definitely make them again!


Dessert
Melon Slices
Cantaloupe for dessert - the melon wasn't very sweet, so this wasn't a great dessert - but at least it was something :) - I'll call it a night!
