E2 28 Day Challenge - Day 13

Today was my triathlon training REST DAY!! But I certainly did not rest - today was also food planning and shopping day! Whew, I'm glad that is over - now our fridge is completely stuffed full of food! Hopefully I planned well enough to get us through the whole week :)

Oh, and I bought these too - so excited to see if it makes me more fast and efficient on my bike!
I budgeted $200 for this purchase, but I got the pedals for $75. The shoes were on clearance for $70 and they were having a 15% off everything sale, so I got them for $63 - saved myself a cool 62 buckeroos!

Day 13

1725 cals (225g carbs, 56g fat, 56g protein, 41g fiber)

Migas Especiales & Orange Slices
Basically breakfast burritos - was pretty good! refried beans, chopped up veggie burger sauteed w/ onions, lettuce and salsa - on a whole grain TJ's tortilla. Very sweet and juicy orange slices on the side! Oh, and don't forget the COFFEE!

TJ's masala veggie burgers on bread w/ lettuce (simple)
Cut up 5 corn tortillas and broiled them for 10 min or so - not quite long enough, but it got the job done!

Portobello Mushroom Fajitas with Brown Rice, Guacamole & Black Beans
Very yummy dinner - who can say no to tacos in this household? nobody!
Sauteed onions, peppers, mushrooms
refried beans
TJ's soy chorizo
chopped lettuce and tomatoes
1 avocado mashed with seasonings
brown rice
Corn tortillas warmed on the stove
And... SALSA of course!

Strawberries with Chocolate Sauce
1/2 cup almond meal, 1/3 cup cocoa powder, 4 tbsp agave, 1 tsp vanilla, couple shakes of cinnamon
mixed that all together and poured over raspberries and blueberries
VERY decadent - I really enjoyed this - it was almost TOO rich... I would not have wanted to eat more, but I will definitely make this again!
