E2 28 Day Challenge - Day 17

Today I got a new phone, so my evening was filled with creating new contacts, and I totally forgot to take dinner or dessert pictures - boo :(
But I did take a picture of La Jolla from the cliffs I ran to at lunch - beautiful day!!



Day 17

1755 cals (302g carbs, 41g fat, 79g protein, 40g fiber)

Breakfast
1cup cereal, 1/2 cup milk, bananas and blueberries - filling and hit the spot!

Lunch
E2 Open Face Sandwich with Tofu Salad
Had plenty leftover from lastnight so had more quinoa & beans for lunch - with some cucumber spears - no ketchup today, but I enjoyed it! Cold, even :)

Dinner
Ack! No more pictures the rest of the day! This was pretty good - I've never made homemade pad thai - it wasn't exactly like I'd hoped, but we all ate it up! My 14yo did ask for some with no peanuts though - - but I neglected to mention to him that the sauce had peanut butter in it :)
(used the recipe in the link mostly - did snow peas instead of broccoli, and added 1 tbsp peanut butter - and no orange slices, but other than that it's the same recipe)

Dessert
Nectarine Slices with Raw Almonds
Strawberries in Soy Yogurt
No nectarines, so we went with defrosted strawberries in soy yogurt!

  1. Thanks for the link-up! This was actually my first time making Pad Thai. I normally like it *spicy*, but knew the kiddos would not appreciate the heat. :)
