Today we went to the beach to watch the sunset after dinner - the water was calm, the air was thick and the sun was a blazing deep red in the sky - hard to capture all of that with a phone...

but we had fun and who doesn't love a relaxing walk on the beach?

Day 18

Melon Slices & English Muffin

OK not quite melon slices and english muffin - but the basic idea. Toast with applesauce, with a banana and orange - and of course the COFFEE! Had a late morning with the hubby and we got to eat breakfast together :)
Lunch
E2 Open Face Sandwich with Tofu Salad

Since I didn't make this the other day, I decided to try it out today. The only mistake I made with the recipe is that I saw 2 t and before I had the chance to really think about it, I put 2 tablespoons of Braggs into the mix instead of 2 teaspoons!! So I added 1 tablespoon of agave to hopefully mellow it out - it seemed to be OK!
Sandwich turned out tasty - but I think only because of the tomato and lettuce to offset the Braggs - I will definitely use less next time ^_^
Dinner
Jane’s Jammin’ Burritos

These were actually VERY good! My 14yo didn't care for the zucchini and bell peppers, but ate most of the burrito anyways! I really enjoyed this dinner, and we will be having it again for certain. Next time I will chop everything into much smaller pieces.

Grab SOMETHING!

We got home after the beach and I did not feel like making anything - so we just grabbed some cereal to munch on (I got raisin bran and added 1T of raisins, Paul had granola) while we watched True Blood! Season 3, first two episodes DOWN!
