E2 28 Day Challenge - Day 19

I log all of my calories on SparkPeople - you can see summaries of everything exactly that I'm eating on my Shared Food & Fitness Tracker. I don't take pictures of everything I eat, but I do log everything that I eat. You will also see the workouts that I do every day - I'm in FULL swing of triathlon training!
I choose to share my stats publicly, but you can make everything private on SparkPeople so that you can track everything privately.


Day 19

2237 cals (442g carbs, 55g fat, 69g protein, 81g fiber)

Breakfast
Giganto breakfast again - very nice and I think it gives me good energy for my run (if I eat it early enough, that is - otherwise sideache city!)

Lunch
Leftover Jammin' Burritos mix in corn tortillas with salsa and lettuce! Have I mentioned we love tacos??!! :)

Dinner
No picture of dinner this time - I think I do pretty good to remember most of the time, but a lot of dinners only have pictures because Paul reminds me lol
Veggie burgers heated on a skillet - the sweet potato rounds were just 1/2 inch sliced sweet potato slices baked in the oven at 450 for 25 minutes (flipped about 20 minutes in).
Adults ate most of the sweet potato rounds - kids for some reason don't really like sweet potatoes at all... but I made them eat 2 each lol

Dessert
Kiwi & Banana Slices
Blackberries with Soy Yogurt
No kiwi, so just defrosted blackberries, poured 1/4 cup soy yogurt on top - I put oats on top of that, Paul chose granola - nice and light :)
