French Toast with Melon Slices with Blueberries

These were interesting - the dip for the bread was really easy to make - just dumped everything in the food processor and mixed it all up. It cooked up almost EXACTLY like real french toast - the middle was just a tad soggy but not too bad. My 14yo did not like it AT ALL - he didn't like the banana taste. Paul and I both thought it was fine, but I would rather just make real french toast with eggs... we don't make it very often, but when we do, we're looking for that true french toast taste...
It was yummy though! Did have a cooked banana taste so if you like that, this recipe is for you!

Burgers & Fries


Made Amy's California Veggie burgers, and my burger had a 1/4 cup of the Jammin Burritos mix on it, along with lettuce, ketchup, and mustard - really filling!
Fries was sliced up russets, coating was 1 tbsp flour with cumin, curry powder, and garlic powder. Then baked at 450 for 30 minutes (could have used a little more cooking but we were HUNGRY)
For me a very filling lunch!
Dinner

I couldn't find this recipe online, so I just made my own chili - chili is pretty easy and you can make a lot of variations pretty easily! Here is the ingredients for the version I made tonight: Vegan Chili
I also cut up some TJ's corn tortillas and baked them in the oven at 400 until they were crispy - nice accompaniment!

I did not feel like making cookies tonight, so instead I got these goodies from Trader Joe's. They are vegan and 4 twists are 120 calories - so we had these tonight and they were very tasty! Key is to take out your 4, and put the rest FAR FAR AWAY!!
