E2 28 Day Challenge - Day 22

Sunday is my aquathlon - so I am tapering this week. For those that don't know, tapering is either really welcoming, or can be really stressful for people (because they're used to training so hard every day). For me right now, since my ultimate race is not for another two months, I am not doing a lot of tapering this week - just a tad. But I think it's a valuable thing to do - and giving your body a rest before you beat the crap out of it is a good idea :)


Day 22

1728 cals (300g carbs, 46g fat, 57g protein, 43g fiber)

Breakfast
Rip’s Big Bowl

Went for the kiwi this week - for me it really meshed well with this breakfast! I am really enjoying a big bowl of various cereal with different fruits in it! Biggest surprise for me is that you don't have to add a ton of milk for this breakfast to work - only 1/2 cup just enough to soak into all the cereals.

Lunch
E2 Stuffed Pita with Black Bean Spread

WOW! I am really impressed with this black bean dip that I found on Exploits of a Vegan Wannabe - it has lots of flavor and it's LOOWWW cal! It has some ingredients I never buy (tomatillo, limes, poblano) but it's totally worth it. Can you believe I bought two tomatillos for 20 cents? lol

Dinner
Spring Greens Salad & Barbeque Pizza

Paul and I LOVED this pizza! The kids HATED this pizza! lol
Salad dressing - Strawberry Vinaigrette (kinda)
1 tbsp apple cider vinegar
1 tbsp strawberry fruit spread
2 tbsp soy yogurt (plain)
1/2 tsp lemon pepper
MIX!

Dessert
Frozen Grapes

I've never had frozen grapes, but I'm REALLY glad I chose to do this with red instead of green grapes. These were not too hard - actually they were perfect consistency, just COLD!

Everyone liked them, even MARIO! :)
