February Food Challenge - Week 3

This week felt more hectic - like by the time I got around to dinner, I wasn't feeling so into cooking. But we've managed to get through it. I modified some dinners to be different than what I had planned in my meal plan, but I'm really happy with how it all turned out - and glad that I don't have to feel 100% into it every day.

This week's meh of the week was the WF Collard Wraps. Paul is just really not into having fruit as an ingredient in non-sweet recipes. I think it might have been better with a really sweet orange - but the one that I had tasted a little like grapefruit?

This week's YAY of the week was Friday night's dinner with our friends Shacky and Vanessa. I just made a spread of different things to put in your bowl, and different kinds of sauce, and we all got to make our own bowl of food. The recipe I found on Post Punk Kitchen for the tofu was amazing and I've decided to make tofu with braggs and curry powder every time forever. I also have decided that I LOVE anything that has peanut butter in it...

Week 3 Food Journal (Rachel) - February 15-21

Day 15
Breakfast - oatmeal - oats, chia, peanut butter, raspberry mango jelly, blueberries
Snack 1 - leftover buckwheat hemp coconut bars, 
Lunch - pinto beans, rice, frozen mixed veg, YU Creamy Ranch dressing
Snack 2 - Banana
Dinner - Big Bowl of goodness - rice, PPK curry tofu, broccoli, kale, avocado, chipotle guacamole (de Pablo, spicy!), Show Me Vegan peanut sauce, YU creamy ranch dressing
Dessert - Menghini Sauvignon Blanc, Crispin Natural Hard Apple Cider (2 flavors)

Day 16
Breakfast - Rice Bowl - rice, leftover almond paste from making almond milk, blueberries, maple syrup, and coffee with said almond milk!
Snack 1 - banana, Uber bar
Snack 2 - fruit, and fruit (at a birthday party)
Snack 3 - Larabar
Dinner - Rice & Beans w/ NMA mole sauce

Day 17
Breakfast - oatmeal - oats, almonds, blueberries, hemp, banana
Snack 1 - 2 dates w/ walnuts (trail run fuel)
Lunch - post-run smoothie - banana, strawberries, water, applesauce, hemp, chia - add protein powder
Dinner - Quinoa, broccoli, various sauces (peanut sauce, cheese sauce, curry sauce - all homemade with various ingredients - I wouldn't call any of them a rousing success...)
Dessert! Made YU Carrot Cake with Orange Coconut Cream Frosting with my little sister for her birthday!

Day 18
President's Day Brain Freeze - I cannot recall what happened foodwise this day! Might have something to do with what is listed below for dessert :)
Dinner - collard wraps - using jalapeno cilantro corn tortillas, and chard instead
Dessert - TJs Sea Salt & Pepper Rice Crisps, TJs Reserve Syrah, Lundberg Organic Brown Rice Cake w/ PB&J

Day 19
Breakfast - smoothie - banana, mixed berries, flaxseed, hempseed, water - add protein powder
Snack 1 - coffee, 1 Vegan Banana-Chocolate cupcake
Lunch - leftover collard wraps mix, peanut sauce, froz mixed veg, sweet pototato on jal. cilantro corn torts
Snack 2 - Apple Pie Larabar
Dinner - Chili with fries and quinoa - canned (black beans, tomato sauce, diced tomatoes), onion, garlic, bell pepper, spices - frozen french fries and sweet potato tots - quinoa on bottom of bowl, topped with chili, topped with nooch and fries = yum!

Day 20
Breakfast - Oatmeal - oats, walnuts, raisins, chia, blueberries
Snack 1 - oskri chocolate coconut bar (dangerously good)
Lunch - leftovers - quinoa, chili
Snack 2 - kombucha (homemade) and banana
Dinner - Taco night - corn tortillas, guacamole de Pablo, mashed potatoes w/ taco seasoning, black beans w/ braggs & lime juice, salsa
Dessert - Rice cake w/ TJ's Superfruit Spread

Day 21
Breakfast - smoothie - banana, raspberries, dates, water, hemp seed, flaxseed - add protein powder
Snack 1 - orange, almonds
Lunch - leftovers - collard wraps mix with peanut sauce and quinoa
Dinner - WF White Bean and Spinach Salad - added avocado, black beans, romaine lettuce
Dessert - Rice cakes topped with PB or AB, and drizzled with homemade chocolate sauce (based on Averie Cooks Raw Vegan Coconut Oil Chocolate - but didn't bother freezing it)
